1. Stewed Bananas In Coconut
A deliciously sweet banana flavor with subtle coconut undertones.
Ingredients:
2 cups coconut cream (or coconut milk, but cream will be thicker)
1 cup apple juice
5 bananas (unpeeled)
(optional) 1 drop pure vanilla extract
(optional) pinch of cinnamon powder
Directions:
- 1Place banana in a pan and cover with water. Bring to boil and cook for 10 minutes or until banana is soft and skin has darkened.
- 2Drain bananas and leave to cool before peeling.
- 3Combine apple juice, coconut cream and, if desired vanilla extract in a pan and bring to boil. Add bananas and cook for 3 minute sir until heated through.
- 4Serve warm. Sprinkle with cinnamon powder.
- 5Refrigerate for 3 days or freeze up to 3 months.
